Description
White Chicken Enchilada Casserole is a creamy, cheesy, and easy-to-make dinner that layers shredded chicken, white enchilada sauce, tortillas, and cheese into one delicious bake. This comforting chicken casserole is perfect for meal prep, weeknight dinners, and family gatherings.
Ingredients
2 cups shredded chicken
8 flour tortillas
2 cups white enchilada sauce
1 cup sour cream
1 cup shredded Monterey Jack cheese
1 cup shredded mozzarella cheese
1 (4 oz) can green chiles
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. In a bowl, mix together white enchilada sauce, sour cream, green chiles, garlic powder, salt, and pepper.
3. Spread a small amount of the sauce mixture on the bottom of the baking dish.
4. Layer half of the flour tortillas, then half of the shredded chicken, a portion of the sauce, and half the cheese.
5. Repeat with the remaining tortillas, chicken, sauce, and top with remaining cheese.
6. Cover with foil and bake for 25 minutes.
7. Remove foil and bake for an additional 10-15 minutes, until cheese is bubbly and golden.
8. Let the casserole rest for 10 minutes before slicing and serving.
Notes
This casserole can be made ahead and stored in the fridge before baking.
You can substitute corn tortillas for flour, but the texture will be different.
Add sautéed onions, black beans, or corn for extra flavor and bulk.
