Ingredients
12 oz linguine
2 chicken breasts
8 oz Velveeta cheese, cubed
1 cup heavy cream
1 tablespoon Cajun seasoning
3 cloves garlic, minced
2 tablespoons butter
1 tablespoon olive oil
¼ cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil and cook the linguine until al dente according to package instructions. Drain and set aside, reserving some pasta water.
2. Season the chicken breasts with Cajun seasoning, salt, and pepper.
3. In a skillet over medium heat, add olive oil and 1 tablespoon butter. Sear the chicken on both sides until golden and fully cooked. Remove and let rest before slicing.
4. In the same skillet, add the remaining butter and sauté the garlic until fragrant.
5. Pour in heavy cream, stir, and add Velveeta cubes. Let melt completely.
6. Stir in Parmesan cheese and an additional pinch of Cajun seasoning.
7. Toss in cooked linguine, adding reserved pasta water as needed to loosen the sauce.
8. Mix until pasta is creamy and well-coated.
9. Top with sliced chicken and garnish with fresh parsley.
