Ingredients

2 cups cooked shredded chicken

2 tablespoons butter

1 cup chopped carrots

1 cup chopped celery

1 small onion, diced

2 cloves garlic, minced

1/4 cup all-purpose flour

6 cups chicken broth

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon chopped parsley (optional)

1 cup all-purpose flour (for dumplings)

2 teaspoons baking powder

1/2 teaspoon salt (for dumplings)

1/2 cup milk


Instructions

1. In a large pot, melt the butter over medium heat. Add chopped onion, carrots, and celery. Cook for about 5 minutes until softened. Stir in garlic and cook for another minute.

2. Sprinkle flour over the vegetables and stir well to coat. Gradually pour in chicken broth while stirring to avoid lumps. Let simmer and thicken.

3. Add shredded chicken to the pot. Season with salt and pepper. Let simmer gently while you prepare the dumpling dough.

4. In a medium bowl, mix flour, baking powder, salt, and milk until just combined. Dough will be thick and sticky.

5. Drop heaping tablespoons of dumpling dough into the simmering pot. Cover with a lid and let steam for 15 minutes without lifting the lid.

6. Once dumplings are puffed and cooked through, check seasoning and add parsley if desired. Serve hot.

Notes

This recipe makes 4 to 6 servings.

Do not open the lid while dumplings are cooking to ensure fluffiness.

Add extra broth when reheating if dumplings have absorbed too much liquid.
