Ingredients
12 corn tortillas
2 cups shredded chicken or mashed potatoes
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 cup vegetable oil (for frying)
1/2 cup shredded lettuce (for topping)
1/4 cup Mexican crema or sour cream (for topping)
1/4 cup crumbled queso fresco (for topping)
1/4 cup salsa of choice (for topping)
1 avocado, sliced (for topping)
Toothpicks (optional)
Instructions
1. Prepare the filling by seasoning the shredded chicken or mashed potatoes with salt, pepper, and garlic powder.
2. Warm the corn tortillas on a skillet or in the microwave wrapped in a damp cloth until soft and pliable.
3. Place 2 tablespoons of filling on one end of each tortilla and roll tightly; secure with toothpicks if needed.
4. Heat vegetable oil in a skillet over medium-high heat.
5. Fry tacos seam-side down in batches, turning until golden brown and crispy, about 2-3 minutes per side.
6. Transfer to a paper towel-lined plate to drain excess oil.
7. Remove toothpicks and top with lettuce, crema, queso fresco, salsa, and avocado.
8. Serve immediately while hot and crispy.
Notes
Corn tortillas must be warmed to avoid cracking during rolling.
To make them vegetarian, stick with mashed potatoes or add refried beans.
Fried tacos reheat best in the oven or air fryer, not the microwave.
