Ingredients
2 large heirloom tomatoes
2 ripe peaches
1 ball burrata cheese
1 handful fresh basil leaves
3 tablespoons toasted almonds or pecans
1 tablespoon balsamic glaze
1 tablespoon olive oil
1 pinch salt
1 pinch freshly cracked black pepper
Instructions
1. Slice the heirloom tomatoes into wedges or thick rounds and place on a serving plate.
2. Cut peaches into similar-sized slices and arrange them with the tomatoes.
3. Tear the burrata and tuck it gently between the fruit slices.
4. Toast the almonds or pecans in a skillet for 2 to 3 minutes until golden and aromatic. Cool slightly.
5. Sprinkle the toasted nuts over the salad.
6. Drizzle the balsamic glaze and olive oil evenly over the top.
7. Finish with a pinch of salt and cracked pepper.
8. Tear fresh basil over the salad and serve immediately or let sit for 5–10 minutes.
Notes
Use firm but ripe peaches to keep the texture perfect.
Add crusty bread on the side to soak up the dressing and juices.
