This Slow Cooker Teriyaki Chicken is tender, juicy, and full of sweet and savory flavor. Made with boneless chicken thighs and a homemade teriyaki glaze, it’s the perfect easy crockpot chicken recipe for weeknight dinners, meal prep, or freezer meals.
Ingredients
1.5 lbs boneless skinless chicken thighs
1/2 cup soy sauce
1/4 cup brown sugar
2 tablespoons honey
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 tablespoons rice vinegar
1 tablespoon cornstarch
2 tablespoons water
1 tablespoon sesame seeds
2 green onions, chopped
Instructions
1. Whisk together soy sauce, brown sugar, honey, garlic, ginger, and rice vinegar in a bowl until smooth.
2. Place the chicken thighs in the slow cooker and pour the sauce over them to coat.
3. Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is tender.
4. Remove chicken and shred using two forks.
5. Mix cornstarch and water in a small bowl to make a slurry.
6. Pour the slurry into the sauce in the slow cooker and stir.
7. Cook on high for 10–15 minutes until the sauce thickens.
8. Return shredded chicken to the slow cooker and toss to coat.
9. Top with sesame seeds and green onions before serving.
Notes
Use chicken thighs for extra tenderness and flavor.
Add red pepper flakes to the sauce if you prefer a spicier kick.
