Ingredients
3 to 4 pounds chuck roast
4 cups beef broth
2 tablespoons Worcestershire sauce
4 cloves garlic
1 large onion
2 tablespoons soy sauce
1 teaspoon dried thyme
1 bay leaf
6 slices provolone cheese
6 hoagie rolls
Instructions
1. Trim excess fat from the chuck roast and place it in the slow cooker.
2. Slice the onion and peel the garlic cloves. Add both to the slow cooker.
3. Pour in beef broth, Worcestershire sauce, and soy sauce.
4. Add thyme and bay leaf to the pot.
5. Cover and cook on low for 8 hours or high for 4 hours, until beef is tender.
6. Remove beef, shred it with two forks, and set aside.
7. Strain the broth, discarding solids. Save the liquid as au jus.
8. Toast hoagie rolls under the broiler.
9. Pile shredded beef on rolls and top with provolone slices.
