Description

Roasted Garlic Cowboy Butter is a bold, flavorful compound butter infused with roasted garlic, fresh herbs, lemon, and a hint of heat. Perfect for grilled steaks, corn, seafood, or crusty bread, this cowboy butter adds a smoky, zesty punch to any dish.


Ingredients

1 cup unsalted butter

1 whole garlic bulb

1 tablespoon fresh parsley, finely chopped

1 teaspoon fresh thyme leaves

1 tablespoon lemon juice

1 teaspoon lemon zest

1 teaspoon Dijon mustard

1/4 teaspoon cayenne pepper or crushed red pepper flakes

1/4 teaspoon salt

1/4 teaspoon ground black pepper


Instructions

1. Preheat oven to 400°F. Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35 minutes until soft and golden.

2. Let the garlic cool slightly, then squeeze the cloves from the bulb into a small bowl.

3. Allow the butter to come to room temperature until softened.

4. In a medium bowl, mix the softened butter with the roasted garlic, herbs, lemon juice and zest, Dijon mustard, cayenne, salt, and pepper.

5. Stir until well combined and smooth.

6. Transfer to a jar or shape into a log using parchment paper.

7. Chill in the refrigerator for at least 1 hour before serving.

Notes

Use unsalted butter to control seasoning.

You can freeze this butter in small portions for easy use.

Roasting the garlic is key — it mellows the flavor and adds sweetness.
