Ingredients

16 oz rigatoni

1 lb steak tips (sirloin or ribeye)

2 tbsp Cajun seasoning

2 tbsp olive oil

4 tbsp butter

4 garlic cloves, minced

1 1/4 cups heavy cream

1 cup grated parmesan cheese

1/2 tsp salt

1/4 tsp black pepper

2 tbsp fresh parsley, chopped (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook rigatoni according to package directions until al dente. Drain and reserve 1/2 cup pasta water.

2. In a hot skillet over medium-high heat, add olive oil. Toss steak tips with Cajun seasoning. Sear for 2–3 minutes per side until browned. Remove and let rest.

3. In the same skillet, melt butter and add minced garlic. Cook for 1 minute until fragrant.

4. Pour in heavy cream. Stir to deglaze and simmer for 2–3 minutes to thicken slightly.

5. Reduce heat and stir in parmesan until sauce is smooth. Season with salt and pepper.

6. Add rigatoni and reserved pasta water to the skillet. Toss to coat well.

7. Plate the pasta, top with steak tips, and garnish with fresh parsley. Serve warm.

Let steak rest before slicing to keep it juicy.

Don’t let the garlic brown; it can turn bitter.

Use fresh grated parmesan for best melting and flavor.
