One Pan Chicken and Pineapple Tacos are a quick, flavorful weeknight dinner featuring juicy chicken, sweet caramelized pineapple, and warm spices, all made in one skillet. This easy taco recipe brings bold tropical flavor, perfect for busy families or taco lovers craving something new.
Ingredients
1 ½ pounds chicken thighs, boneless and skinless
2 cups fresh pineapple chunks
½ red onion, chopped
3 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon paprika
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1 lime, juiced
8 corn tortillas
1 ½ cups shredded cabbage or slaw mix
Instructions
1. Dice the chicken thighs into bite-sized pieces, chop the onion, and mince the garlic. Cube the fresh pineapple if using whole.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken and let it sear for 4-5 minutes undisturbed. Season with salt, pepper, chili powder, cumin, and paprika.
3. Add chopped onion and garlic. Cook for 2 minutes until softened and fragrant.
4. Stir in pineapple chunks. Let them caramelize for 3-4 minutes until golden and slightly sticky.
5. Remove from heat and squeeze in fresh lime juice. Toss everything to coat evenly.
6. Warm tortillas in a dry pan or over an open flame. Fill each with chicken-pineapple mixture and top with cabbage or slaw. Serve immediately.
Notes
Use fresh pineapple for best caramelization and flavor.
Leftovers store well for up to 3 days in the fridge.
You can also use flour tortillas or add avocado slices for extra richness.
