Description

These no bake salted caramel cookies are a chewy, sweet and salty dessert that comes together in minutes without an oven. Perfect for a quick treat or party platter, they use rolled oats, soft caramels, and sea salt for an irresistible flavor. Try this easy no bake cookie recipe with pantry staples!


Ingredients

1 ½ cups rolled oats

¼ cup salted butter

10 oz soft caramels

¼ cup brown sugar

2 tbsp whole milk or heavy cream

1 tsp vanilla extract

Flaky sea salt for topping


Instructions

1. In a saucepan over low heat, melt soft caramels with butter and milk, stirring constantly until smooth.

2. Remove from heat and stir in vanilla extract.

3. Add oats and mix well until fully coated.

4. Scoop mixture onto parchment-lined baking sheet, flatten into cookie shapes.

5. Sprinkle with sea salt flakes while warm.

6. Chill in fridge for 30 minutes or until firm.

7. Serve cold or allow to soften slightly at room temperature before eating.

8. Store in airtight container in fridge for up to 7 days or freeze for 1 month.

Notes

Store cookies chilled to maintain shape.
