Ingredients

2 large chicken breasts

2 tablespoons Cajun seasoning

1 lemon

3 cloves garlic minced

3 tablespoons butter

1 ½ cups heavy cream

¾ cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

2 tablespoons chopped fresh basil

12 ounces rotini or fusilli pasta

2 tablespoons olive oil

Salt and pepper to taste


Instructions

1. Cut chicken into bite-sized pieces and toss with Cajun seasoning, salt, pepper, and juice of half a lemon.

2. Heat olive oil in a skillet over medium-high heat and cook chicken until golden and cooked through. Set aside.

3. Cook pasta in salted boiling water until al dente, reserving ½ cup pasta water, then drain.

4. In the same skillet, melt butter over medium heat, add garlic and sauté 1 minute.

5. Stir in heavy cream and simmer, then add Parmesan, salt, pepper, parsley, and basil.

6. Toss cooked pasta in sauce, adding pasta water if needed to loosen.

7. Top with chicken, garnish with extra herbs and Parmesan, and serve with lemon wedges.

Notes

Use freshly grated Parmesan for best flavor and texture.

Don’t overcook the chicken to keep it juicy.

Adjust Cajun spice level by adding more or less seasoning to taste.
