Description

Japanese curry on rice is a cozy, comforting meal made with tender chicken, potatoes, carrots, and a rich curry sauce served over steamed rice. Ingredients

400g chicken thighs

1 yellow onion

2 carrots

2 medium potatoes

2 cloves garlic

1 tablespoon fresh ginger

1/2 block Japanese curry roux

3 cups water or chicken broth

4 cups cooked Japanese short-grain rice


Instructions

1. Cut chicken thighs into bite-sized pieces and sear in a large pot until browned.

2. Add chopped onion and sauté until golden. Stir in minced garlic and ginger.

3. Add chopped carrots and potatoes. Pour in water or broth to cover ingredients.

4. Bring to a boil, then reduce heat and simmer for 20 minutes until vegetables are tender.

5. Break curry roux into chunks and stir into the pot. Let it melt and thicken the sauce. Simmer for 10 more minutes.

6. Serve the curry over steamed rice. Garnish as desired and enjoy hot.

Notes

The curry thickens as it cools, so add a splash of water when reheating.

You can substitute chicken with beef, pork, or tofu for different variations.

Homemade curry roux works too if you can’t find boxed options.
