Ingredients
1 cup rolled oats
3/4 cup all-purpose flour
1/2 cup brown sugar
1/2 cup unsalted butter
2 tablespoons golden syrup
1/2 teaspoon baking soda
1/4 teaspoon salt
4 ounces dark chocolate
Instructions
1. Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
2. In a large bowl, combine rolled oats, flour, brown sugar, baking soda, and salt.
3. In a small saucepan, melt the butter and golden syrup until just combined.
4. Pour the melted mixture into the dry ingredients and stir until the dough forms.
5. Scoop out tablespoons of dough, roll into balls, flatten slightly, and place on the tray.
6. Bake for 12–15 minutes until golden around the edges. Let cookies cool completely.
7. Melt dark chocolate in a heatproof bowl over simmering water or microwave.
8. Spread melted chocolate on each cooled cookie. Let set at room temperature or chill briefly.
