Description

This Garlic Butter Shrimp Scampi Lasagna recipe blends tender shrimp, garlicky butter sauce, creamy béchamel, and layers of pasta into a comforting seafood pasta bake. Perfect for family dinners or entertaining guests, it’s a delicious twist on classic lasagna with seafood flair.


Ingredients

12 lasagna noodles (oven-ready or pre-cooked)

1 ½ pounds medium or large shrimp, peeled and deveined

6 cloves garlic, minced

6 tablespoons unsalted butter, divided

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon lemon zest

½ teaspoon red pepper flakes (optional)

1 ½ cups ricotta cheese

2 cups shredded mozzarella cheese

¾ cup grated Parmesan cheese

1 cup heavy cream

2 tablespoons all-purpose flour

1 cup whole milk

2 tablespoons fresh parsley, chopped

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Melt 2 tablespoons of butter with olive oil in a skillet. Add minced garlic and red pepper flakes. Sauté shrimp until just pink, then set aside.

2. In a saucepan, melt 4 tablespoons of butter. Whisk in flour to create a roux. Slowly add milk and cream, whisking constantly until thickened. Stir in Parmesan, lemon zest, salt, and pepper. Set aside.

3. In a bowl, mix ricotta with salt, pepper, and chopped parsley.

4. Grease a 9×13 baking dish. Spread a thin layer of béchamel, then layer noodles, ricotta, shrimp, more béchamel, and mozzarella. Repeat until all ingredients are used. Top with béchamel and extra cheese.

5. Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake 10–15 more minutes until golden and bubbly. Let rest 10 minutes before serving.

Notes

Cream cheese can be used in place of ricotta for an extra creamy texture.

Don’t overcook shrimp during the sauté; they’ll cook again in the oven.

Let the lasagna sit before slicing to keep the layers intact.
