Ingredients
1 lb chicken breasts
1 cup long grain white rice
1 can cream of chicken soup
1 can cream of mushroom soup
1 1/2 cups chicken broth
1 packet onion soup mix
2 tbsp butter (optional)
Instructions
1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
2. In the baking dish, mix together the rice, cream of chicken soup, cream of mushroom soup, and chicken broth until smooth.
3. Lay the chicken breasts on top of the rice mixture. Slice thicker pieces in half to ensure even cooking.
4. Sprinkle the onion soup mix evenly over the top of the chicken.
5. Add small pats of butter on top for extra richness (optional).
6. Cover tightly with aluminum foil and bake for 1 hour and 15 minutes.
7. Remove from oven and let it rest uncovered for 5 minutes before serving.
Notes
Use boneless, skinless chicken breasts for best texture.
Make sure to tightly cover the dish to keep moisture in.
Add a splash of broth when reheating leftovers to bring back creaminess.
