Ingredients
1 cup dairy-free milk (almond, oat, or soy)
1 tablespoon maple syrup
2 1/4 teaspoons active dry yeast
2 tablespoons olive oil
2 teaspoons apple cider vinegar
2 1/2 cups gluten-free all-purpose flour (with xanthan gum)
1 teaspoon salt
Instructions
1. Warm the dairy-free milk to about 100°F and combine it with maple syrup and yeast in a bowl. Let sit for 5–10 minutes until foamy.
2. In a large mixing bowl, add the gluten-free flour and salt. Pour in the activated yeast mixture, olive oil, and apple cider vinegar. Mix until a sticky dough forms.
3. With oiled hands, divide the dough into 8–10 equal portions and shape into rolls. Place them in a greased round pan.
4. Cover with a towel and let them rise in a warm place for 45 minutes, until visibly puffed.
5. Preheat the oven to 375°F. Bake the rolls for 22–26 minutes or until golden on top. Let cool slightly before serving.
Notes
Use a 1:1 gluten-free flour blend with xanthan gum for best results.
These rolls are freezer-friendly and reheat well in the oven.
For extra flavor, brush the tops with olive oil or vegan butter before baking.
