Ingredients
4 cod fillets 1 cup all-purpose flour 1/2 cup cornstarch 1 teaspoon baking powder 1 cup chilled club soda 1/2 teaspoon salt 1/4 teaspoon black pepper vegetable oil for frying 4 sandwich buns
Instructions
1. Pat cod fillets dry and season with salt and pepper. In a bowl, whisk flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in chilled club soda until smooth and slightly thick. Heat oil in a deep skillet to 350°F (175°C). Dip cod fillets in batter, letting excess drip off. Fry fillets 4–5 minutes per side until golden and cooked through. Drain on a rack or paper towels.
