Ingredients
16 oz rotini pasta
1 lb ground beef
2 tbsp Cajun seasoning
3 cloves garlic, minced
1 small onion, finely chopped
8 oz Velveeta cheese, cubed
1 cup shredded mozzarella cheese
1 cup milk
2 tbsp butter
1 tbsp olive oil
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil and cook the rotini until al dente. Drain and set aside.
2. In a large skillet over medium-high heat, add olive oil and ground beef. Cook until browned and no longer pink. Drain excess fat.
3. Add butter, onion, and garlic to the skillet. Cook until soft and fragrant, about 3–4 minutes. Stir in Cajun seasoning.
4. Reduce heat and add cubed Velveeta and milk. Stir until fully melted into a smooth, creamy sauce.
5. Add cooked rotini to the sauce and toss to coat. Sprinkle in mozzarella and stir until melted.
6. Serve immediately while hot and cheesy.
Notes
This dish is best enjoyed fresh but also makes excellent leftovers.
Adjust Cajun seasoning to taste if you prefer more or less heat.
You can add bell peppers or sautéed mushrooms for extra texture and flavor.
