Ingredients
1 lb rigatoni
1.5 lbs boneless skinless chicken breast or thighs
2 tbsp Cajun seasoning
1 tbsp olive oil
1 tbsp butter
4 garlic cloves, minced
1 cup heavy cream
1.5 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup chicken broth
1/2 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, chopped
Instructions
1. Boil a large pot of salted water and cook rigatoni until al dente. Drain and set aside.
2. Cut chicken into bite-sized pieces. Season with Cajun seasoning, salt, and pepper.
3. In a skillet, heat olive oil and butter over medium heat. Add chicken and sear until golden and cooked through. Remove and set aside.
4. In the same skillet, sauté garlic until fragrant. Pour in chicken broth and heavy cream, scraping up browned bits.
5. Stir in mozzarella and Parmesan until smooth and melted. Simmer on low to thicken slightly.
6. Return chicken and rigatoni to the skillet. Toss until evenly coated and heated through.
7. Garnish with fresh parsley and serve hot.
