Description

Ingredients

8 oz cream cheese (softened)

1 cup shredded white cheddar cheese

½ cup dried cranberries (divided)

½ cup shelled pistachios (divided)

1 tablespoon honey

¼ teaspoon garlic powder

1 tablespoon chopped fresh parsley (optional, for garnish)


Instructions

1. Let cream cheese sit at room temperature until softened, about 20 minutes.

2. In a mixing bowl, combine softened cream cheese, shredded white cheddar, ¼ cup cranberries, ¼ cup pistachios, honey, and garlic powder. Mix until well combined.

3. Lay plastic wrap on the counter and spoon the cheese mixture into the center.

4. Use the wrap to form a log shape, smoothing the sides. Refrigerate for at least 1 hour.

5. In a shallow dish, mix the remaining ¼ cup cranberries and ¼ cup pistachios.

6. Unwrap the chilled cheese log and roll it in the cranberry-pistachio coating until fully covered.

7. Garnish with chopped parsley if desired.

8. Serve with crackers, baguette slices, or fresh apple wedges.
