Ingredients
2 boneless skinless chicken breasts
3 cups chicken broth
4 cloves minced garlic
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
3 cups fresh spinach
1 1/4 cups orzo pasta
1/2 cup grated Parmesan cheese
1 tablespoon olive oil
Instructions
1. Place the chicken breasts into the crockpot and drizzle with olive oil.
2. Season with salt, pepper, Italian seasoning, and minced garlic.
3. Pour in chicken broth and add chopped sun-dried tomatoes.
4. Cover and cook on low for 6 hours until the chicken is tender.
5. Shred the chicken in the crockpot using two forks.
6. Add heavy cream, Parmesan, and orzo to the pot. Stir well.
7. Turn the crockpot to high and cook for another 20–30 minutes until orzo is tender.
8. Stir in spinach and let it wilt.
9. Taste and adjust seasoning if needed.

Cream may curdle if cooked too long—add it only toward the end.
