Ingredients
0.75 lb chicken thighs
1.5 tsp chili powder
1 tsp garlic powder
2 tbsp lime juice
0.5 tbsp honey
0.5 tsp salt
0.5 cup coconut milk
3 cups cooked rice
0.5 cucumber
0.75 cup shredded carrot
0.5 cup red cabbage
2 tbsp fresh cilantro
Instructions
1. Combine chili powder, garlic powder, lime juice, honey, and salt in a bowl. Add chicken thighs and marinate for 20 minutes or overnight.
2. Heat a skillet over medium-high heat, add oil, and sear chicken for 5–6 minutes per side until cooked through. Let rest, then slice.
3. In a small bowl, whisk coconut milk, lime juice, honey, and salt for the drizzle. Adjust to taste.
4. Assemble bowls by layering cooked rice, sliced chicken, cucumber, shredded carrot, and red cabbage.
5. Drizzle coconut lime sauce on top and finish with chopped cilantro. Serve immediately or store for later.
Notes
Use boneless chicken breasts if preferred, but do not overcook.
Marinate chicken longer for deeper flavor.
Add extra lime juice to the drizzle if you love more tang.
