Ingredients

1 can chickpeas (15 oz), drained and rinsed

0.5 cup dried cranberries

0.5 cucumber, diced

1 red bell pepper, diced

0.25 red onion, finely chopped

0.25 cup fresh parsley, chopped

0.5 cup creamy feta

0.25 cup Greek yogurt

2 tablespoons lemon juice

2 tablespoons olive oil

0.5 teaspoon garlic powder

Salt to taste

Black pepper to taste


Instructions

1. In a blender or food processor, combine feta, Greek yogurt, olive oil, lemon juice, garlic powder, salt, and pepper. Blend until smooth to create the creamy feta dressing.

2. Dice the cucumber, red bell pepper, and red onion. Roughly chop the parsley.

3. In a large bowl, mix together the chickpeas, cranberries, and chopped vegetables.

4. Pour the creamy feta dressing over the salad and toss until well combined.

5. Chill in the refrigerator for at least 20 minutes before serving.

Notes

This salad tastes even better after resting for a few hours.

If using canned chickpeas, rinse them well to remove excess sodium.

The dressing also works great as a dip or spread!
