Ingredients
2 cups twisted pasta (rotini or cavatappi)
2 chicken breasts, cubed
1 cup Velveeta cheese, cubed
1 cup mozzarella cheese, shredded
1 cup heavy cream
3 garlic cloves, minced
2 tablespoons butter
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Boil a large pot of salted water and cook the twisted pasta until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add the cubed chicken, season with salt and pepper, and cook until golden brown and cooked through. Remove from pan.
3. In the same skillet, melt butter and add minced garlic. Sauté for about 1 minute until fragrant.
4. Pour in the heavy cream and bring to a gentle simmer. Add in the cubed Velveeta and shredded mozzarella. Stir constantly until completely melted and smooth.
