Description

A rich and comforting Cheesy Scalloped Potatoes recipe layered with Yukon Gold potatoes and creamy cheddar-Gruyère sauce. This easy homemade potato casserole is the perfect side dish for holidays, dinners, and potlucks.

Ingredients

2.5 lbs Yukon Gold potatoes

4 tbsp butter

3 tbsp all-purpose flour

2 cups whole milk

1 cup heavy cream

1.5 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

2 cloves garlic, minced

1.5 tsp salt

1 tsp black pepper

1 tbsp fresh thyme (optional)

Instructions

1. Wash and peel the Yukon Gold potatoes. Slice them into thin, even rounds about 1/8-inch thick. Place in a bowl of cold water to prevent browning.

2. In a saucepan, melt butter over medium heat. Add garlic and cook for 1 minute. Whisk in flour to make a roux.

3. Slowly add milk and heavy cream while whisking to avoid lumps. Cook until thickened slightly.

4. Reduce heat and stir in cheddar and Gruyère until melted. Season with salt and pepper.

5. Drain and pat dry the potatoes. Grease a baking dish and begin layering potatoes and cheese sauce, ending with a top layer of sauce.

6. Cover with foil and bake at 375°F (190°C) for 45 minutes. Remove foil and bake for 25–30 minutes more until golden and bubbly.

7. Let cool for 10 minutes before serving. Garnish with fresh thyme if desired.

Notes

Use Yukon Gold for best texture and creamy layers.

Make ahead by assembling the dish and refrigerating until ready to bake.

Add cooked bacon or caramelized onions for extra flavor.
