This Easy Cowboy Casserole recipe is the ultimate comfort food, perfect for busy weeknights or feeding a hungry crowd. With crispy tater tots, seasoned ground beef, melty cheddar, and a creamy base, it’s a hearty casserole that’s quick to prepare and irresistibly delicious. Great for family dinners or potlucks, this cowboy casserole is easy to customize and loaded with satisfying flavor.

Ingredients

1 pound ground beef

1 medium yellow onion, chopped

2 cloves garlic, minced

1 can (10.5 ounces) cream of mushroom soup

1 cup sour cream

1 ½ cups shredded cheddar cheese

1 cup frozen corn

1 bag (32 ounces) frozen tater tots

½ teaspoon salt

¼ teaspoon black pepper

Instructions

1. In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

2. Add the chopped onion and minced garlic to the beef. Cook until softened, about 3 minutes.

3. Stir in the cream of mushroom soup, sour cream, frozen corn, salt, and pepper. Cook for 2-3 minutes until fully combined and heated through.

4. Preheat the oven to 375°F (190°C).

5. Spread the beef mixture into a 9×13-inch baking dish.

6. Sprinkle shredded cheddar cheese evenly over the beef mixture.

7. Arrange frozen tater tots in a single layer on top.

8. Bake uncovered for 35-40 minutes until tater tots are golden and the casserole is bubbly.

9. Let rest for 5 minutes before serving. Garnish with fresh parsley or green onions if desired.

Notes

This casserole can be made a day ahead and refrigerated before baking.

For extra flavor, try adding cooked bacon or a dash of smoked paprika.

Swap the cream of mushroom soup for cream of chicken if preferred.
