Description

This Apple Fritter Cake recipe features tender cinnamon-spiced apples layered in a moist vanilla cake and finished with a sweet glaze. Perfect for breakfast, dessert, or snacking, this cake is a cozy twist on the classic apple fritter. Easy to bake and irresistibly sticky!


Ingredients

2 large apples

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

1/2 cup unsalted butter

3/4 cup brown sugar

2 large eggs

1 1/2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 3/4 teaspoons baking powder

1/2 cup milk

1 cup powdered sugar

2 to 3 tablespoons heavy cream or milk


Instructions

1. Peel and dice the apples. Toss them with granulated sugar and cinnamon, and set aside to release their juices.

2. In a mixing bowl, cream the butter and brown sugar until light and fluffy.

3. Beat in the eggs one at a time, followed by the vanilla extract.

4. In a separate bowl, whisk together flour and baking powder.

5. Gradually add the dry ingredients to the wet mixture, alternating with milk until the batter is smooth.

6. Grease a baking dish and pour in half the batter.

7. Spoon half the apple mixture over the batter.

8. Add the remaining batter and top with the rest of the apples.

9. Swirl gently with a knife to create a marbled effect.

10. Bake at 350°F (175°C) for 40–45 minutes or until a toothpick inserted comes out clean.

11. While warm, drizzle with glaze made by whisking powdered sugar with cream or milk.

Notes

Use firm apples like Granny Smith or Honeycrisp to keep texture after baking.

For extra richness, add a pinch of nutmeg to the apple mixture.

Let the cake rest before slicing so the glaze fully sets in the top layer.
