Description

Ingredients

2 cups rolled oats

1 ½ cups diced apples (Granny Smith or Honeycrisp)

1 teaspoon cinnamon

¼ cup honey

2 large eggs

¾ cup milk

1 teaspoon vanilla extract

1 teaspoon baking powder

¼ teaspoon salt

2 tablespoons coconut oil (or melted butter)


Instructions

1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or grease lightly.

2. In a large bowl, whisk together eggs, milk, honey, vanilla extract, and melted coconut oil until smooth.

3. In another bowl, combine oats, baking powder, cinnamon, and salt. Stir in diced apples.

4. Add dry ingredients to the wet mixture and stir until well mixed and evenly coated.

5. Pour the batter into the baking dish and smooth out the top.

6. Bake for 30–35 minutes until set and golden brown.

7. Allow to cool completely before slicing into bars.

Notes

This recipe works best with firm apples like Granny Smith or Honeycrisp.
