Ingredients
1 lb chicken breast
1/2 cup Greek yogurt
2 tbsp lemon juice
1 tsp lemon zest
2 cloves garlic, minced
2 tbsp olive oil
1 bunch asparagus, trimmed
1/2 tsp sea salt
6 oz feta cheese, crumbled
1 tbsp harissa paste (or more to taste)
1/2 cup heavy cream
12 oz rigatoni or penne pasta
1 tbsp chopped fresh dill or parsley (optional)
Instructions
1. Whisk together Greek yogurt, lemon juice, lemon zest, garlic, and 1 tbsp olive oil. Coat chicken and marinate for 30 minutes.
2. Preheat oven to 425°F. Toss asparagus with remaining olive oil and salt. Roast for 15–20 minutes until crisp.
3. Grill or sear chicken until golden and cooked through. Rest and slice into strips.
4. Cook pasta until al dente. Reserve 1 cup of pasta water and drain.
5. In a saucepan, melt feta with cream and harissa over medium heat. Stir until smooth. Loosen with pasta water if needed.
6. Toss pasta with sauce. Add chicken. Top with roasted asparagus and herbs before serving.
Notes
Marinate the chicken overnight for deeper flavor.
Add more harissa for a spicier kick.
Use penne or rigatoni to trap the creamy sauce perfectly.
