Description

Ingredients

3 large eggs

1 cup all-purpose flour

1 cup whole milk

1/2 teaspoon salt

2 tablespoons beef drippings or vegetable oil


Instructions

1. In a mixing bowl, whisk together eggs, flour, milk, and salt until smooth. Let the batter rest for at least 30 minutes or overnight in the fridge.

2. Place a muffin tin or roasting pan in the oven. Add a spoonful of beef drippings or oil to each cavity. Preheat oven to 450°F (230°C) with the pan inside.

3. Carefully pour the rested batter into the hot fat, filling each cavity about halfway.

4. Bake for 20–25 minutes without opening the oven. The puddings should puff up and turn golden.

5. Serve immediately while hot and crisp.

Use room temperature eggs and milk for the best rise.

Resting the batter helps improve texture and puffiness.
