Ingredients
2 pounds beef chuck roast, cut into chunks
1 large yellow onion, diced
3 carrots, peeled and sliced
3 celery stalks, chopped
4 garlic cloves, minced
3 medium potatoes, diced
2 tablespoons tomato paste
4 cups beef broth
1 tablespoon Worcestershire sauce
1 bay leaf
3 sprigs fresh thyme
2 tablespoons olive oil
1 ½ teaspoons salt
1 teaspoon black pepper
Instructions
1. Cut the beef into bite-sized chunks and season with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef in batches until browned. Remove and set aside.
2. In the same pot, add diced onions, carrots, and celery. Sauté until softened, then stir in garlic and tomato paste. Cook for another 2 to 3 minutes.
3. Return the beef to the pot. Pour in beef broth and Worcestershire sauce. Add potatoes, bay leaf, and thyme. Stir and bring to a simmer.
4. Cover and reduce heat to low. Simmer for 2 hours, stirring occasionally, until beef is tender and stew has thickened.
5. Remove the bay leaf and thyme stems. Taste and adjust seasoning if needed. Serve hot with crusty bread or over mashed potatoes.
Notes
This stew tastes even better the next day.
You can substitute beef with chicken thighs or a plant-based protein.
Add a splash of red wine for deeper flavor.
