Description

This Ultimate Teriyaki Chicken Stir-Fry recipe is a quick and healthy dinner loaded with colorful vegetables, juicy chicken, and a savory homemade teriyaki sauce over hearty wild rice. It’s perfect for busy weeknights, meal prep, and a delicious way to enjoy Asian-inspired flavors at home.


Ingredients

2 chicken breasts

1 cup wild rice

1 red bell pepper

1 yellow bell pepper

1 cup broccoli florets

1 large carrot

1 cup snow peas

3 cloves garlic

1 tablespoon fresh ginger

1/4 cup soy sauce

2 tablespoons honey

1 teaspoon cornstarch

1 tablespoon sesame oil

1 tablespoon olive oil

2 green onions

1 tablespoon sesame seeds


Instructions

1. Slice the chicken breasts into thin strips. Chop all vegetables into bite-sized pieces. Mince the garlic and ginger. Cook wild rice according to package directions and set aside.

2. In a bowl, whisk together soy sauce, honey, garlic, ginger, and cornstarch until smooth to create your teriyaki sauce.

3. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes until golden and fully cooked. Remove and set aside.

4. In the same pan, add sesame oil and sauté bell peppers, broccoli, carrots, and snow peas for about 4–5 minutes until slightly tender but still crisp.

5. Return chicken to the pan. Pour in the teriyaki sauce and toss everything to coat. Cook for 2–3 more minutes until the sauce thickens.

6. Serve the stir-fry over wild rice. Garnish with green onions and sesame seeds before serving.

Notes

Use pre-cut vegetables to save prep time.

Don’t overcook the veggies if you want them to stay crunchy.

The sauce can be doubled if you prefer a saucier stir-fry.
