Description

A rich and creamy Ultimate Loaded Baked Potato Mac and Cheese made with sharp cheddar, sour cream, crispy bacon, and chunks of baked potatoes. The perfect comfort food pasta recipe for family dinners or cozy nights in.


Ingredients

1 pound elbow macaroni

2 large baked potatoes

2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

4 ounces cream cheese

4 tablespoons butter

2 cups milk

1 cup sour cream

8 slices cooked bacon, chopped

4 green onions, chopped

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Boil a large pot of salted water and cook the elbow macaroni until al dente. Drain and set aside.

2. Bake your potatoes if not already done. Once cooked, scoop out the insides and chop into small chunks.

3. In a saucepan, melt butter over medium heat. Whisk in milk and add cream cheese until melted. Stir in cheddar and Monterey Jack until smooth.

4. Add cooked macaroni, baked potato chunks, sour cream, most of the bacon, and half of the green onions into the cheese sauce. Stir well to combine.

5. Spoon into bowls or a baking dish. Top with remaining bacon, green onions, and extra cheese if desired. Serve warm.

Notes

Let the cheese melt slowly to avoid grainy texture.

Use freshly shredded cheese for the best melt and flavor.
