Ingredients
2 chicken breasts
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
3 garlic cloves, minced
1 1/2 cups heavy cream
1 cup Greek feta cheese, crumbled (preferably smoked)
1/2 cup parmesan cheese, grated
2 tablespoons butter
10 ounces pasta (fettuccine or tagliatelle)
1 teaspoon lemon zest
2 tablespoons fresh parsley, chopped
1 bunch asparagus spears, trimmed
1/4 cup panko breadcrumbs
Instructions
1. Season chicken breasts with olive oil, chili powder, salt, and pepper. Let sit for 15 minutes.
2. Sear chicken in a hot pan until golden and cooked through. Remove and set aside.
3. Toss asparagus with olive oil, salt, pepper, grated parmesan, and panko. Roast at 400°F (200°C) for 12–15 minutes.
4. Cook pasta in salted water until al dente. Reserve 1 cup of pasta water. Drain pasta.
5. In a skillet, melt butter and sauté garlic. Add heavy cream and simmer gently.
6. Stir in smoked feta and parmesan. Whisk until smooth. Add lemon zest. Thin with pasta water if needed.
7. Slice cooked chicken and add to the sauce with the drained pasta. Toss to combine.
8. Serve immediately with roasted asparagus and garnish with parsley or extra feta.

Use block feta in brine for best texture and flavor.
