Twice Baked French Onion Mashed Potatoes combine fluffy russet potatoes, sweet caramelized onions, creamy Gruyère cheese, and a rich, buttery finish. Ingredients
3 pounds russet potatoes
2 large yellow onions
6 tablespoons butter
1 cup heavy cream
1 cup shredded Gruyère cheese
1 cup sour cream
1 ½ teaspoons salt
½ teaspoon black pepper
1 teaspoon fresh thyme (optional)
Instructions
1. Melt butter in a large skillet over medium heat. Add sliced onions and cook, stirring often, for 30 to 40 minutes until deeply caramelized and golden.
2. Peel and cube the potatoes. Boil in salted water until tender, about 15 to 20 minutes. Drain well.
3. Mash the potatoes with butter, cream, sour cream, salt, and pepper until smooth and fluffy.
4. Fold in most of the caramelized onions and Gruyère cheese, reserving a bit of each for topping. Stir in fresh thyme if using.
5. Spoon the mixture into a greased 9×13 baking dish. Top with reserved onions and cheese.
6. Bake at 375°F for 20 to 25 minutes, until bubbly and lightly golden on top.
7. Let cool for 5 to 10 minutes before serving for best texture and flavor.
Notes
Caramelize onions slowly for the best flavor — don’t rush them.
For extra texture, broil the top for 2 minutes at the end of baking.
Use Yukon Golds for a creamier mashed texture if preferred.
