Ingredients
1 lb chicken breasts
1 tbsp olive oil
4 garlic cloves, minced
1 tsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
2 tbsp butter
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
1 tbsp Cajun seasoning
1/2 cup sun-dried tomatoes (in oil), drained and chopped
12 oz pasta (fettuccine or penne)
2 tbsp fresh parsley, chopped (optional)
Instructions
1. Cut chicken breasts into bite-sized chunks and season with salt, pepper, Italian seasoning, and paprika.
2. In a large skillet, heat olive oil and sear the seasoned chicken until golden brown and cooked through. Add minced garlic and cook 1 minute. Remove and set aside.
3. In the same skillet, melt butter. Stir in Cajun seasoning, then pour in heavy cream. Bring to a gentle simmer.
4. Add grated Parmesan cheese and stir until sauce is smooth and creamy. Adjust seasoning to taste.
5. Stir in chopped sun-dried tomatoes and let them warm through in the sauce.
6. Return the chicken to the skillet. Add cooked pasta and toss everything together to coat evenly in sauce. Simmer 2–3 minutes to meld flavors.
7. Serve hot, garnished with fresh parsley if desired.
Notes
Use boneless thighs instead of breasts for a juicier bite.
Add spinach or mushrooms for extra texture and nutrition.
