Description

Ingredients

2 cups cooked turkey, shredded or chopped

6 oz egg noodles

3 carrots, sliced

2 celery stalks, chopped

1 yellow onion, diced

3 cloves garlic, minced

8 cups chicken or turkey broth

1 bay leaf

1 teaspoon dried thyme

2 tablespoons chopped fresh parsley

1 tablespoon olive oil

Salt and pepper to taste


Instructions

1. Heat olive oil in a large pot over medium heat.

2. Add onions, celery, and carrots. Sauté until softened and onions are translucent.

3. Stir in garlic and cook for another minute.

4. Pour in the broth, add bay leaf and thyme, and bring to a boil.

5. Reduce heat and simmer for 15 minutes.

6. Add cooked turkey and egg noodles.

7. Simmer until noodles are tender, about 8–10 minutes.

8. Season with salt and pepper.

9. Remove bay leaf and stir in chopped parsley.

10. Serve hot and enjoy.

Notes

Use leftover Thanksgiving turkey or rotisserie chicken for convenience.

For a clearer broth, skim off any foam that rises during simmering.

To keep noodles firm, cook them separately and add before serving.
