Ingredients
10 oz frozen chopped spinach (thawed and drained)
4 oz cream cheese (softened)
1 cup shredded cheddar cheese
1/2 cup sour cream
2 tbsp butter
1 small onion (finely chopped)
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Preheat your oven to 350°F and lightly grease a medium baking dish.
2. In a skillet over medium heat, melt the butter and cook the chopped onion until soft and translucent.
3. In a large mixing bowl, combine the thawed spinach, softened cream cheese, sour cream, cooked onions, garlic powder, salt, and pepper. Mix until well combined.
4. Stir in most of the shredded cheddar cheese, reserving a small amount for topping.
5. Spread the mixture evenly in the baking dish and sprinkle the remaining cheese on top.
6. Bake for 25 to 30 minutes or until the casserole is bubbly and golden brown on top.
7. Let rest for a few minutes before serving warm.
Notes
Cream cheese should be softened for easier mixing.
Squeeze all excess water from spinach to avoid a watery casserole.
You can add crumbled bacon or mushrooms for extra flavor.
