Ingredients
3 large eggs
1 cup light corn syrup
1 cup brown sugar, packed
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 cups pecan halves
1 9-inch unbaked pie crust
Instructions
1. Preheat your oven to 350°F (175°C) and place your 9-inch unbaked pie crust into a pie pan. Crimp the edges and set aside.
2. In a large mixing bowl, whisk together the eggs, corn syrup, brown sugar, melted butter, vanilla extract, and salt until smooth.
3. Fold in the pecan halves, coating them well in the mixture.
4. Pour the filling into the prepared pie crust and spread evenly.
5. Place the pie on a baking sheet and bake for 50 to 60 minutes, or until the center is just set and barely jiggles.
6. If the crust or pecans begin to brown too quickly, tent with foil during the last 15 minutes.
7. Let the pie cool completely on a wire rack to help the filling set properly.
8. Serve at room temperature or slightly chilled with whipped cream or ice cream.
Notes
This pie sets as it cools, so don’t slice too early.
You can toast the pecans beforehand for extra depth of flavor.
