Ingredients
1 cup cherry tomatoes, halved
1 cup cucumber, sliced
1 cup fresh mozzarella balls (bocconcini or ciliegine), drained
2 tablespoons fresh basil, torn or chiffonade
2 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze (optional)
Salt and pepper, to taste
Instructions
1. Slice the cherry tomatoes in half and cut the cucumbers into rounds or half-moons.
2. In a large mixing bowl, combine the tomatoes, cucumbers, and mozzarella balls.
3. Season with a little salt and pepper to begin building flavor.
4. Add the fresh basil and drizzle with olive oil.
5. Gently toss until everything is evenly coated.
6. Taste and adjust seasoning if needed.
7. Drizzle with balsamic glaze just before serving if desired.
