Ingredients
120 grams mascarpone cheese
3 tablespoons espresso or strong brewed coffee
1 cup crushed ladyfingers or sponge cake
2 tablespoons cocoa powder
1/3 cup powdered sugar
1 teaspoon vanilla extract
200 grams dark or semi-sweet chocolate, for coating
1 tablespoon coffee liqueur (optional)
Instructions
1. Finely crush the ladyfingers or sponge cake into crumbs.
2. In a mixing bowl, combine the crumbs with mascarpone, espresso, powdered sugar, vanilla extract, and coffee liqueur if using. Mix until a smooth dough forms.
3. Using a spoon or cookie scoop, form the mixture into balls and place them on a parchment-lined baking sheet.
4. Chill the balls in the refrigerator for 30 minutes or until firm.
5. Melt the chocolate in a double boiler or microwave in intervals until smooth.
6. Dip each truffle into the melted chocolate, coating it completely. Let excess drip off and return to the sheet.
7. Sprinkle with cocoa powder or chocolate shavings while still wet, if desired.
8. Refrigerate until the chocolate coating is set, then enjoy.
