Ingredients
1 lb ground beef
1 small onion, diced
1 packet taco seasoning
2 cups cooked rice
1 cup black beans, rinsed and drained
1 ½ cups shredded cheese (cheddar or Mexican blend)
½ cup sour cream
½ cup salsa or pico de gallo
4 to 6 large flour tortillas
Instructions
1. In a skillet over medium heat, cook the ground beef and diced onion until browned. Drain excess grease.
2. Stir in taco seasoning with a splash of water and simmer until the mixture thickens.
3. Warm tortillas in the microwave for 20–30 seconds or wrap in foil and heat in the oven.
4. Lay out a tortilla and layer with rice, beef mixture, black beans, cheese, salsa or pico, and sour cream.
5. Fold in the sides of the tortilla, then roll from the bottom into a tight burrito.
6. Optional: Toast burritos in a skillet or bake at 375°F for 10 minutes until golden and crisp.
