Ingredients

2 tablespoons olive oil

1 medium yellow onion diced

3 cloves garlic minced

2 medium carrots diced

2 celery stalks diced

1 can (14.5 oz) diced tomatoes

6 cups vegetable broth or chicken broth

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 cup small pasta (ditalini, elbows, or shells)

2 cups fresh spinach or chopped kale

1/2 cup grated Parmesan cheese


Instructions

1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened.

2. Stir in the minced garlic and cook for about one minute until fragrant.

3. Add diced tomatoes and broth then season with Italian seasoning, salt, and pepper.

4. Bring the soup to a gentle boil then reduce heat and simmer for about fifteen minutes.

5. Add the pasta and cook until al dente according to package instructions.

6. Stir in spinach or kale and cook until wilted.

7. Taste the soup and adjust seasoning if needed.

8. Serve hot topped with grated Parmesan cheese.

Notes

You can substitute the pasta with gluten-free pasta if needed.

If the soup thickens during storage simply add extra broth when reheating.
