Description
A hearty Texas Tamale Pie Casserole layered with cornbread, spiced beef, enchilada sauce, green chiles, and cheddar cheese. This comforting Tex-Mex casserole is easy to make, perfect for weeknights, potlucks, and reheats like a dream. A flavorful twist on tamales in casserole form!
Ingredients
1 pound ground beef
1 small yellow onion, chopped
2 cloves garlic, minced
1 box cornbread mix
1 cup canned corn, drained
1 can diced green chiles
1 cup shredded cheddar cheese
1 cup enchilada sauce
2 eggs
1 third cup milk
Instructions
1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.
2. In a large bowl, combine cornbread mix with eggs and milk. Stir in corn and green chiles. Pour into baking dish and bake for 15 minutes.
3. While cornbread bakes, brown ground beef in a skillet over medium heat. Add onions and garlic; cook until soft.
4. Stir in enchilada sauce, season with salt, pepper, chili powder, and cumin to taste.
5. Remove cornbread from oven and spoon beef mixture over the top.
6. Sprinkle cheddar cheese evenly over the casserole.
7. Bake for another 15 to 20 minutes until cheese is melted and bubbly.
8. Let rest 5 to 10 minutes before serving.
Notes
The cornbread layer should be only partially baked before adding the meat, so it finishes cooking in the final bake.
If using homemade cornbread, reduce any added sugar to balance the savory flavors.
Top with fresh cilantro, sour cream, or pickled jalapeños for extra flair.
