2 lbs chicken thighs
1 can pineapple chunks with juice (20 oz)
3/4 cup brown sugar
1/2 cup soy sauce

2 tablespoons water (for cornstarch slurry)
Instructions
1. Add the chicken thighs to the bottom of your slow cooker.
2. In a medium bowl, combine the pineapple chunks (with juice), brown sugar, soy sauce, and minced garlic.
3. Pour the mixture over the chicken, making sure it’s well coated.
4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
5. Optional: To thicken the sauce, remove the chicken and whisk a slurry of cornstarch and water into the sauce.
6. Turn the heat to high and cook uncovered for 15-20 minutes until the sauce thickens.
7. Return the chicken to the crockpot and coat with the thickened sauce.
