Ingredients

3 boneless, skinless chicken thighs

1 ½ tablespoons sweet chili sauce

2 cups cooked jasmine rice

½ cucumber, sliced

1 medium carrot, peeled into ribbons

1 avocado, sliced

2 tablespoons chopped fresh cilantro

¼ cup coconut milk

1 tablespoon lime juice

1 teaspoon maple syrup or honey

Pinch of salt


Instructions

1. Season the chicken thighs with salt and sear in a skillet over medium-high heat until golden and fully cooked.

2. Coat the cooked chicken with sweet chili sauce and cook for 1–2 minutes to slightly caramelize.

3. Prepare your rice and set aside, fluffed.

4. Slice cucumber, peel carrot ribbons, cube or slice avocado, and chop cilantro.

5. In a small bowl, whisk together coconut milk, lime juice, maple syrup or honey, and a pinch of salt for the drizzle.

6. To assemble, layer rice in bowls, top with glazed chicken, veggies, and avocado. Drizzle generously with coconut lime sauce.

7. Garnish with chopped cilantro and serve immediately.

Notes

Use chicken breast instead of thighs for a leaner version.

Add red chili flakes if you prefer more heat.
