Ingredients
1.5 pounds chicken thighs
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
3 tablespoons soy sauce
3 tablespoons honey
1/4 cup Thai sweet chili sauce
1 tablespoon rice vinegar
1 tablespoon Sriracha
2 tablespoons cornstarch
1 tablespoon lime juice
2 green onions, chopped
2 tablespoons fresh cilantro, chopped
2 tablespoons oil for cooking
Instructions
1. Cut chicken thighs into bite-sized pieces and toss with cornstarch until coated.
2. Heat oil in a skillet over medium-high heat. Sear the chicken in a single layer, cooking in batches if needed, until golden and fully cooked.
3. In a bowl, whisk together soy sauce, honey, Thai sweet chili sauce, rice vinegar, Sriracha, garlic, and ginger.
4. Pour the sauce mixture into the pan with the cooked chicken.
5. Simmer for a few minutes until the sauce thickens and coats the chicken well.
6. Remove from heat, stir in lime juice, and toss to combine.
7. Garnish with chopped green onions and cilantro before serving.
8. Serve hot over jasmine rice, noodles, or in lettuce cups.
Notes
This recipe works best with chicken thighs for extra juiciness.
Adjust the spice level by increasing or reducing the Sriracha.
For meal prep, store in the fridge and reheat with a splash of water to loosen the sauce.
