Description

Ingredients

24 oz cream cheese

1 cup granulated sugar

3 large eggs

2 tsp vanilla extract

1 cup sour cream

2 tbsp all-purpose flour

1/2 cup butter, melted

1 box golden cake mix

2 cups fresh strawberries, halved

1/4 cup strawberry gelatin powder

2 cups whipped cream

1 cup crushed vanilla sandwich cookies


Instructions

1. Preheat the oven to 325°F (160°C). Line the bottom of a springform pan with parchment paper.

2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla, sour cream, and flour.

3. Pour cheesecake batter into the pan and bake for 50–60 minutes or until center is just set. Cool and refrigerate for 4 hours or overnight.

4. Prepare golden cake mix according to package directions and bake two 9-inch layers. Let them cool completely.

5. For the crunch topping, mix crushed cookies with melted butter and strawberry gelatin powder until crumbly.

6. On a serving plate, layer one cake round, followed by the chilled cheesecake, then the second cake round.

7. Cover the entire cake with whipped cream and press the strawberry crunch mixture along the sides and top.

8. Garnish with halved fresh strawberries and whipped cream rosettes.

Notes

This cheesecake can be made a day ahead for easier assembly.

Use full-fat cream cheese for best texture.

Swap fresh strawberries with frozen (thawed and drained) if needed.
