Description

A delicious twist on classic strawberry shortcake, these strawberry shortcake brownies feature a soft vanilla blondie base, creamy cheesecake layer, and fresh macerated strawberries. Perfect for parties, brunch, or summer desserts. Easy to prep ahead and totally crowd-pleasing!


Ingredients

1 cup butter

1 cup granulated sugar

2 large eggs

1 tablespoon vanilla extract

1 cup all-purpose flour

8 ounces cream cheese

1 cup powdered sugar

2 cups fresh strawberries

1 tablespoon lemon juice


Instructions

1. Preheat your oven to 325°F and line an 8×8-inch baking pan with parchment paper.

2. In a bowl, melt the butter and mix with granulated sugar and vanilla until creamy.

3. Add eggs one at a time, beating well after each. Stir in flour until just combined.

4. Pour the blondie batter into the prepared pan and smooth the top.

5. In a separate bowl, beat cream cheese with powdered sugar until smooth and fluffy.

6. Gently spread the cheesecake mixture over the blondie base in an even layer.

7. Bake for 35 to 40 minutes until the edges are golden and center is just set.

8. Let the brownies cool completely at room temperature.

9. Slice strawberries and toss with lemon juice and a bit of sugar. Let them sit for 15 minutes.

10. Top the cooled brownies with the macerated strawberries and chill for at least 1 hour before slicing.
